Hyatt Regency Lake Tahoe Resort, Spa and Casino would like to introduce Chef Rick Koplau as the Lone Eagle Grille Chef de Cuisine. Chef Rick began his professional culinary career as the Sous Chef of Café 1660 in Osprey, Florida. Eager to expand his culinary knowledge, he later joined the kitchen at Café Orange in Germany, serving farm-to-table contemporary European fare. Following his stay in Germany, Koplau returned to the United States to attend the Kieser University Culinary Arts Program and following, worked side-by-side with Chef Greg Howe at the Ritz-Carlton Sarasota’s signature restaurant, Vernona. During his tenure at Vernona, the restaurant garnered many notable awards including the prestigious AAA Four Diamond Award.
